Yes, you can.

After you change your structure you have to:
1. Run t-code OLIX - this will clean the data in the structure
2. Run t-code OLI7 - to populate your new structrure with orders and scheduling agreements data
3. Run t-code OLI8 - to populate your new structure with deliveries data
4. Run t-code OLI9 - to populate your new structure with billing documents data

Depending on the amount of data to re-structure, you may need to run these in backgroung.

There is plenty of online documentation for these transaction.
