Check the document flow in the sales order, for the item you deleted and then added. Suspect deleting and adding might be affecting the links between the sales order - delivery - invoice. So when you invoice the delivery, you've lost some copy control from sales order - delivery. That's a guess at this stage....never tried this, and am not sure I'd recommend it as a practice to any of my users...
