You can go to customer master XD02/General Data/Unloading Point/assign Receiving point, Department, Working Hours Here you fix working hours 11:00 for Monday to Friday.
You will have to assign your customer country calendar as well.
If you get second confirmed schedule date then time will not show 11:00 but 00:00 so you may have to manually delete the line & put again confirmed date so you will get time. But this manual things are draw back of SAP 7 not yet resolved OSS184840
Or go for Userexits in delivery so time will be pulled from customer master.
