I am not in SAP, but you can use a Reject Reason.

Dear Friends,
We create Sale contracts using TCode: VA41/VA42/VA43. There are times when we have to cancel the contract partially. e.g If contract is of 100 KG and Sale Order for 80 KG has been created against that Contract and Billing and Delivery has been done. Now we want to cancel remaining 20 KG. Please let me know if there is a documented procedure to do so. I will be very much thankful to you.
