When you copy Sales order from quatation, copy control setting between
sales document type will be applicable. So please do settings between
Quatation to Sales order in VTAA T.code. There is a field called copy
configuration for item catagory with options as "blank, A, B, C".
Please check these options and see which one will fit to your requirement.

I have a configured material in my quotation that the customer configures. I want that the customer should not be able to make any changes in the configurations in the sales order level. It should remain the same as in quotation. I am not sure how to configure this.
